Balinese FRIED RICE / Nasi Goreng

Nasi Goreng, the national dish of Indonesia, translates as “fried rice.” It is a meal of stir-fried rice spiced with sweet soy sauce, shallot, garlic, tamarind and chili and accompanied by other ingredients, mainly egg or chicken. This dish can be enjoyed by itself or as the basis of a larger meal. Nasi goreng is common dish that’s easy to dress up by using fancier table ware and adding more condiments. It is a truly delectable one-meal rice dish that is made simply in a wok, very easy to make and won’t take more than 20 minutes to prepare.

  • 6 tbsp coconut oil
  • 6 cloves garlic
  • 6 shallots
  • 2 large red chillies
  • 100g white cabbage
  • 1 tbsp spiced tomato sauce
  • 200g chicken
  • 2 tbsp light soy sauce
  • 2 tbsp sweet soya sauce
  • 2 eggs
  • 600g cooked rice
  • 25g celery
  • 50g leek
  • 50g  caisin
  • Pinch salt
  • 2 tbsp fried shallots


  1. Heat oil in a wok or heavy frying pan (skillet). Add shallots, garlic, carrot and chillies and sauté for 1 minute until shallots and garlic are golden brown.
  2. Add cabbage, spiced tomato sauce and chicken and sauté for another 1 minute. Season with soy sauce and sauté until dry.
  3. Add eggs and scramble then add rice. Cook for another 3 mintes then add remaining ingredients except fried shallots. Mix well and season to taste with salt as necessary. Garnish with fried shallots.
